Try at home - Mini Pizzas by Rino

Ingredients

 

• 500 gr durum flour or fine ground semolina

• 350 ml water, room temperature

• 10 gr fresh/dried yeast

• 8 gr white sugar

• 13 gr salt

• 25 gr extra-virgin olive oil

 

seasoning

 

•      5-6 red vine tomatoes, crushed, without seeds

• fistful of black or green olives {if you like them!}

• oregano and coarse sea salt

 

Method

 

In a large bowl, combine flour, sugar, crumbled yeast 

and half the water.  Gradually stir in the remaining water, 

and then add salt.  Stir in oil, half at a time, mixing well 

after each addition.

 

When the dough has pulled together, turn out onto a 

flat surface and knead until smooth and elastic.

 

Shape the dough into a ball, lightly oil a large bowl and 

place the dough in it.  Cover with plastic wrap and allow 

to rise in a warm place until doubled in volume (3–4 hours)

 

Roll the dough and make small disks about 5-6 cm

 

Pan fry one side and then put it on an oven tray and top 

it with chopped or tinned tomatoes, chopped mozzarella, 

torn basil leaves and dried oregano.

 

Finish in a hot oven for about 6/7 minutes or until the 

mozzarella has melted. 

 

You can add salami, ham, anchovies or whatever you fancy.
